I have been asked many times what chocolate sponge recipe I use for my cakes, and this is the one I have used most often.  I have been using it for many years and it was one of my most popular sponges when I ran my cake business in London.

It is one of the simplest recipes I know, and it delivers great results every time. It is easy to make even if you don’t have a stand mixer – all you need to make the batter is a jug, a bowl, a spatula and a whisk!

You can make it very simply and serve it in glasses or ramekins.  Alternatively, you can freeze it in silicone moulds and then dip in a chocolate and almond coating, as I have done here. Either way it's super tasty!

Just remember that when it comes to chocolate you get what you pay for, so use the best chocolate you can afford - it makes a difference.

Every cake maker should have a good Victoria Sponge recipe in their locker! I have been using this one for more than 15 years!

The recipes has a detailed step by step method explaining the correct process to achieve a light and moist sponge. This is my go-to recipe for making scones and it uses a very different method to the one that we are traditionally taught. It works every time!
