Here’s why the freezer should become your best friend:

  •  Convenience: Bake or prep once and enjoy multiple times with minimal effort. 
  •  Reduce Waste: Freeze leftovers to extend their shelf life. 
  •  Always Prepared: Impress unexpected guests or treat yourself whenever the craving strikes.

Desserts That Freeze Wonderfully 

1. Choux Pastry (Baked & Unbaked) 
Whether you’re making éclairs or classic cream puffs, choux pastry freezes like a dream. 

  •  How to Freeze: Cool your baked choux buns completely before placing them in an airtight container or freezer bag. For unbaked choux, pipe your desired shape onto a tray, freeze until solid, and then transfer to a bag. 
  •  Thawing & Serving: Baked buns can be crisped up in an oven at 350°F (175°C) for a about 5 minutes. Unbaked choux can go straight from the freezer into the oven. 

 2. Tart Cases (Baked & Unbaked) 
Shortcrust & sweet pastry holds its shape and flavour beautifully in the freezer. 

  •  How to Freeze:
  •  For baked shells, cool completely, store in an airtight container, and freeze. 
  •  For unbaked cases, line your tart pans with pastry, then freeze them until firm before transferring to an airtight container. 
  • Thawing:
  •  Baked cases can be used instantly. 
  •  Unbaked shells can go straight into the oven from the freezer.

3. Cakes (Baked) 
Victoria sponge, chocolate fudge cake, or a classic pound cake – these are all excellent candidates for freezing. 

  •  How to Freeze:
  •  Bake and cool your cake completely. Wrap it tightly in plastic wrap, then place into an airtight container or zip lock bag to prevent freezer burn. 
  • Thawing:
  •  Defrost overnight in the fridge and keep the cake in its packaging.  Frost or decorate the cake for a freshly baked look.

4. Mousse Desserts 
Light, airy, and indulgently rich, mousses are a lovely make-ahead treat. 

          How to Freeze:

  •  Pipe mousse into serving dishes / glasses or silicone moulds, cover with plastic wrap, and freeze. 
    Thawing:

5. Cookies (Unbaked) 
Love fresh-from-the-oven cookies but hate the prep? Freezing cookie dough is the ultimate hack! 
          How to Freeze:

  • Scoop cookie dough into balls, place them on a tray, and freeze until firm. Once frozen, pop them into a freezer bag. 
    Baking:
  • Bake straight from frozen, adding just a minute or two to your usual baking time. This works with all kinds of dough, including chocolate chip, oatmeal, sugar cookies and shortbread.

Label Everything 
Always label your frozen desserts with the name and date, so you know what you’re grabbing and how long it’s been stored. 

Cool Thoroughly 
Allow baked goods to cool completely before freezing to avoid ice crystals forming. 

Use Quality Containers 
Invest in airtight containers, freezer-safe bags, and cling film to preserve freshness. 

Flash Freeze First 
For unbaked items like cookie dough or choux buns, flash freeze them in a single layer before transferring to bags or containers. This prevents sticking. 

Avoid Strong-Smelling Foods 
Keep desserts away from items like garlic bread or onion rings in the freezer. Trust me, no one wants chocolate mousse that tastes like last night’s leftovers!
