Almond, Lemon & Blueberry Cake

We made this almond based sponge cake in a variety of forms in our pâtisserie and it was always one of our best selling cakes!

In this simple recipe I have flavoured the sponge with lemon and added a blueberry compote. 

It not only tastes fantastic but it also remains beautifully moist.  If you would prefer, the blueberries can be left out or swapped for another fruit.
